Creamed Kale

Creamed Kale

This is a recipe for a variation of creamed spinach. It’s healthy, delicious, quick, and easy!

Ingredients

Two bunches of kale
1 tbsp butter
1 tbsp Flour
1.5 cups Skim Milk
Rind of 1/4 lemon, peeled and minced
1/2 tsp basil
1/2 tsp salt
1/8 tsp pepper

Directions

Bring a pot of water to a boil. Remove stems from kale & cook kale until it wilts. Meanwhile melt the butter and flour just until it forms a roux. Slowly whisk in the milk. Cook sauce on medium heat until it begins to thicken. Add lemon rind, basil, salt & pepper, and cook for a few minutes longer, stirring regularly. Strain the kale and return to the pot. Add the sauce & mix together.

Serve as a side to any main, or eat the entire pot by yourself.
